Roasted Root Vegetables

Preheat over to 400°. Pour oil and balsamic in the bottom of a 9 x 13 baking dish. Stir in veggies until completely coated. Bake 45-60 minutes.

Ingredients

6-7 C cubed root vegetables (beets, carrots, sweet potatoes, potatoes, etc)

1-2 onions, cut into wedges and separated

1/4 C of any of The Olive Bin's Extra Virgin Olive Oils

2 T of The Olive Bin's Pomegranate Dark Balsamic Vinegar

salt and pepper to taste
