Summer Squash Ribbons with Parmesan

Use a vegetable peeler to cut squash into long thin ribbons and place in large microwave safe bowl. Microwave on high for 30 seconds to 1 minute to quickly steam. Toss squash with oil, vinegar, salt, and pepper. Garnish with Parmesan.

3/4 lb zucchini

3/4 lb yellow squash

2 T of The Olive Bin's Milanese Gremolata Olive Oil

1 T of The Olive Bin's Sicilian Lemon White Balsamic Vinegar

2 oz Parmesan, shaved

salt and pepper to taste
