Wild Rosemary Roasted Potatoes and Peppers

Preheat oven to 400 F. Place cubed potatoes and chopped peppers in a large bowl. Add olive oil, salt, and pepper. Toss well. Transfer to parchment lined baking sheet. Roast 20-25 minutes or until fork-tender. Enjoy!

2 lbs small potatoes, cubed

1 green bell pepper, chopped

1 red bell pepper, chopped

1/4 C of The Olive Bin's Rosemary Olive Oil

1/2 tsp salt

1/2 tsp black pepper
