1/4 red onion
2 Roma tomatoes, diced
2 cloves garlic, minced
1 T fresh lemon juice
1.5 T of The Olive Bin's Chipotle Olive Oil
1.5 T of The Olive Bin's Lime Olive Oil
1 tsp cracked red pepper
1-2 fresh jalapeno, minced (optional)
2-3 avocados, diced
Salt and pepper, to taste

- In a bowl, mash diced avocados (with a fork or other tool) until the guacamole reaches desired consistency
- Add remaining ingredients and mix well
- Serve immediately with tortilla chips, or chill and serve later
